The Burger Bar Recipe courtesy Tyler Florence
2 pounds brisket, ground
Kosher salt and freshly ground black pepper
4 thin slices Swiss cheese
4 hamburger buns, split
Preheat a large cast-iron skillet to medium hot. Take a few paper towels and fold them several times to make a thick square. Blot a small amount of oil on the paper towel and carefully and quickly wipe the hot skillet to make a nonstick surface.
Season the ground meat in a bowl with salt and pepper. Give it about 3 turns in the bowl with your hands or a big spoon and it's done. Shape into 4 patties. When the skillet is hot, put the burgers on the skillet and cook 4 minutes on the first side and 5 for the second side for rare; 7 minutes per side for medium, adding the cheese during the final minute or 2 to melt. Remove the burgers to a plate. Rub the skillet with the folded paper towel again to clean it. Then toast the buns cut side down for about 1 minute, just to mark them. Serve the hamburgers in the buns with the accompaniments below.
Sauteed Mushrooms:
Saute 1 pound thickly sliced mushrooms in 1/4 cup olive oil with 2 sliced garlic cloves and 1 tablespoon fresh thyme leaves over super-high heat until nicely browned, 8 to 10 minutes. Stir in a couple of drops fresh lemon juice to brighten the flavor.
Caramelized Onions:
Heat 2 tablespoons unsalted butter with 2 tablespoons olive oil in a large pan over medium heat. Add 2 onions, cut into 1/2-inch-thick slices, sprinkle with salt and pepper and cook slowly until well caramelized, 15 to 20 minutes.
Tomatoes with Sea Salt and Chives:
Thickly slice 2 pounds red and yellow beefsteak tomatoes, drizzle with olive oil, and sprinkle with sea salt and 1/2 bunch chopped fresh chives.
Bacon with Rosemary:
Lay out 1/2 pound sliced bacon on a baking sheet, strip leaves from 1 sprig rosemary and throw them on top with lots of cracked black pepper and roast at 400 degrees F until the bacon is crisp, about 10 minutes.
Herbed Horseradish Mayonnaise:
Stir together 1 cup mayonnaise, 1 tablespoon prepared horseradish, 1/4 cup freshly minced herbs such as parsley, basil, chives or scallion, 2 tablespoons olive oil, a little squeeze of lemon juice, and salt and pepper.

Here are a bunch of good burger ideas:
BURGER SUGGESTIONS:
Most of these say to grill them but you can use the broiler or pan fry them.
Teriyaki Burgers:
1 1/2 pds hamburger
1 8 oz can water chestnuts (drained and chopped)
Marinade:
1/3 cup reduced sodium beef broth or sherry
1/2 cup reduced sodium soy sauce
2 green onions chopped
1 tbsp brown sugar
2 garlic cloves-minced
1/2 tsp ground ginger
6 buns
6 Pineapple rings
6 slices swiss or provolone cheese
Mix the burger and water chestnuts. Shape into 6 burgers and place in a 13x9 pan.
Mix all marinade ingredients and save out 1/4 cup. Pour remaining marinade over burgers. Marinate at least 2-3 hours or longer (I did a set for a day and 1/2 and they were super awesome). Turn frequently.
Grill patties brushing with remaining marinade. Grill the pineapple rings for about 1-2 minutes per side. Top the burgers with a pineapple ring, and a slice of cheese. Serve on buns. Mmmmmmmm.
These are good to make up a bunch and freeze to pull out and make later.
Or top burgers with pesto, cheese, and sliced red bell peppers. Sliced avocados or guacamole, and bacon and a slice of white cheese.

BEEFBURGER
Makes 2 quarter pounders
INGREDIENTS
250g of lean minced beef*
Ground pepper to taste
1 tablespoon of sunflower oil
METHOD
Divide the mince into two halves. Squeeze each half into a ball and then flatten it out into a disc. Make them firm, so that they don鈥檛 fall apart. Make them chunky, as thin edges will cook too quickly. Season with the pepper.
Put the oil into a frying pan on a medium heat. Fry the burgers for about 5 minutes on each side.
ADDITIONS %26amp; ALTERNATIVES
Add some finely chopped onion. Add some herbs.
Use minced lamb, pork or turkey instead of minced beef. If you use minced lamb, add some finely chopped mint, dried mint or some mint sauce. If you use minced pork, add some finely chopped apple or some apple sauce. If you use minced turkey, add some cranberry sauce.
If you need to make the mince go further, add some grated carrot.
If the burgers won鈥檛 hold together, add some beaten egg. If you make the mixture too wet, add some breadcrumbs.
Cook the burgers under a preheated medium grill for about 5 minutes on each side instead of frying. If the mince is very lean, you might need to coat the burgers with a little oil.
TIPS
Chilling the burgers in the fridge helps them to hold together whilst cooking.
You can make the burgers using a burger press. This is a round mould, which you fill with the mince and then press it into uniformly sized burgers. However, hand made burgers have more 鈥榬ustic charm鈥?and there鈥檚 no washing up.
* Use good quality lean and finely ground mince. The cheaper the mince, the higher the fat content and the more coarsely it is ground. Use chuck steak, which is reasonably cheap but doesn鈥檛 have too much fat, and either get the butcher to grind it, or invest in a meat grinder and do it yourself.
Well, one of my favorite hamburger recipes has a delicious twist. Using ground sirloin, shape into thin patties, a little larger than the size of the buns. Put a small mound of blue cheese in the middle of one patty, then cover with another meat patty and press the edges to seal it. Repeat with each patty. Sprinkle with salt and/or pepper, and cook until done. Top with grilled onions, lettuce, tomato and mayo/mustard if desired.
