Anyone have a good hamburger recipe?

STUFFED HAMBURGER PATTIES





1 lb. hamburger


1 can cream of chicken or cream of mushroom soup


5 to 7 slices bread


1 med. onion


2 stalks celery


1/2 tsp. salt


1 1/2 to 2 tsp. sage





Microwave on high chopped onion and celery for 5 minutes or until tender. Add bread, (pinched into small pieces) salt, sage and enough water to moisten mixture. Make 6 to 8, thin hamburger patties. Spoon dressing into center of patties. Fold patties in half, sealing edges. Brown on both sides. Place in casserole dish cover with soup and 1/2 can of water. Bake for 30 minutes in 350 degree oven.

Mix 1lb. hamburger with the following:





1 packet onion/mushroom soup mix


1 egg


a big handful of crushed Ritz crackers


1 heaping tablespoon pineapple preserves or crushed pineapple


little brown sugar


1 tablespoon celery seeds (if you have some)


big squirt of ketchup or barbeque sauce

BEST HAMBURGER STEAK EVER





Steak:





1 1/2 lbs. ground hamburger


1/4 cup flour


1/4 tsp garlic powder


salt and pepper


1 med onion sliced





Gravy:





1/4 cup flour


2 beef bullion cubes


kitchen bouquet brownong sauce 1/4 tsp


water


salt


pepper





Mix hamburger, salt, pepper, garlic powder, and flour together. Form into patties. Brown on both sides. Remove from skillet.


Saute onion in the same pan, adding a small amount of oil if needed.





After sauteing the onion, remove from skillet and add flour for gravy. Stirring constantly, brown the flour. Stir water into the browned flour to make the gravy.





Add boullion cubes, salt and pepper. Thin with water for desired thickness.





Add Kitchen Bouquet if gravy isn't brown enough.





When gravy is made, put steaks and onion in gravy. Simmer for about 30 to 45 minutes, checking often and adding water to keep gravy from becoming too thick.





Serve with french fries, rice, mashed potatoes or your favorite side dish!

don't use all that stuff others are telling you. you're making a hamburger not a meat loaf. use hamburger meat that is at least 20 % fat, season with salt and pepper and place on a hot grill cooking till the meat is cooked all the way, then add to a bun with a slice of tomato, onion, lettuce, pickle and ketchup or mustard or both. add cheese if you want a cheeseburger
Beer Burgers





1 1/2 pounds ground chuck


3 Tablespoons beer - preferably Guinness, otherwise any beer available


1/4 teaspoon Worcestershire Sauce


salt


fresh ground pepper





Put all ingredients into a medium bowl and gently mix using two forks. Lightly shape into 4 hamburger patties. Grill on the barbecue or fry in pan on the stove. Serve on hamburger buns with condiments of your choice.





These are also excellent if made one day ahead and refrigerated until grilling time.
INGREDIENTS:


2 1/4 pounds lean ground beef


1/4 cup chopped parsley


salt and pepper to taste


3/4 cup blue cheese, crumbled





DIRECTIONS:


Preheat grill for high heat.


In bowl mix together beef, and parsley.


Season with salt and pepper.


Form mixture into twelve 3/8 inch thick patties.


Sprinkle 2 tablespoons cheese over one patty, and cover with a second patty.


Lightly oil grate, and arrange burgers on the grill.


Cook for 3 to 5 minutes on each side, or until done.
Mix grnd beef with faves like fresh chopped garlic, diced onion, s/p, worcestershire or soy sauce or bbq sauce, diced mushrooms.





Make two THIN patties and then put a hunk of favorite cheese in the middle (I love LOVE bleu cheese for this) and close the patties around the edges to form giant burgers. Do not press at any point! Grill away from direct heat on grill.





Top with more cheese, red onion, grated lettuce rather than a hunk or whole leaf, tomato, mayo and put on GOOD bun that's been toasted on grill!
Try this yummy idea:





In a large bowl, mix one pound beef, one pound sausage, chopped onion, dash steak sauce, dash soy sauce. you can also add chopped green pepper, sliced mushrooms, rotel tomatoes.....
to one pound of hamburger add a packet of dry onion soup mix, one egg, 1/2 cup bread crumbs or crumbled crackers (saltines) add some salt and pepper. you might also add some horseradish or worchestire sauce. Also, a really quick and easy way to fix burgers for the grill add salsa or picante sauce to your raw hamburger make patties and grill. I find that the less you do to the hamburger the better - add your basics like salt, pepper, garlic powder or garlic salt, form the patties handling the hamburger no more than is necessary, the more you handle the hamburger the tougher your finished product will be. Same goes for turning burgers on the grill turn once to achieve the most tender patty.
No seasonings, nothing but pure BEEF. Make the patties big, grill only long enough to cook the outside, leaving the inside cold (as in RAW). Slap it on a toasted roll with cheese, ketchup, and fried onions (from a can). Don't tell me this will make you sick, I am a meat cutter and have been eating burgers this way all my life.
Any hamburger is good, one of the best secrets of making a delicious hamburger is sautaying onions beforehand. You can put the sautayed onions on the bread and MAMMA MIA, you have got yourself one hell of a recipe.





Another favorite trick is to mix ketchup and mayonaise together to get a lovely pink sauce for french fries!!
