What are some good recipes for like hamburger meat, ground beef!?

I'm really broke and I wanna cook something nice for my Mom so I have to use what I already have. I need some easy recipes because she's coming over to my new house and I don't want her to see how cheap I am!!!What are some good recipes for like hamburger meat, ground beef!?
Spaghetti with meat sauce and make a salad if you have any fixins in the house.

Brown the meat in a frying pan, sprinkle a little salt, pepper and onion powder on it; when it's done add pasta sauce.

Boil the water for spaghetti with a sprinkle of salt in the water and add the pasta; cook until finished.

Strain the pasta, put it on a platter; dump the meat sauce over the top and dinners on!What are some good recipes for like hamburger meat, ground beef!?
Hamburger Stroganoff:

melt 1/4 c butter

Add 1/2 c chopped onion %26amp; 1 chopped clove garlic

cook until soft

add 1 lb ground beef stir until lightly brown

Add 2 Tbs flour, 1 tsp salt 1/4 tsp pepper, 1/2 lb sliced mushrooms.

Cook 5 min, add 1 can mushroom soup, simmer 10 minutes Add 1 c sour cream, heat, taste, add more salt, if needed.

Can sprinkle with parsley, chives or dill, if you want.

Serve over wide egg noodles.

I normally add a little mustard, more chopped mushrooms, more sour cream. I now saute the mushrooms in extra butter before adding.
Dirty Rice is good. Basically it's seasoned rice and ground beef.

2 cups rice

4 cups chicken stock

4 cloves minced garlic

1 1/2 cups diced white onion

1 cup diced green bell pepper

1 cup diced celery

2 tablespoons vegetable oil

Salt and pepper

1/4 teaspoon dried thyme

1 bay leaf

1 teaspoon cajun seasoning

1 pound cooked and drained ground beef

1 bunch green onions, chopped

Saute celery, onions and bell peppers in vegetable oil until starting to get soft for about 5 minutes. Add garlic and season with salt, pepper, thyme, bay leaf and cajun seasoning. Add cooked and drained groundbeef. Add stock and bring to a boil. Stir in Rice and green onions. Cover and simmer 25-30 minutes until all liquid is evaporated.

Try not to open pot until after 25 minutes. If there is still liquid, stir and continue to cook up to 5 minutes, until rice is soft.
You can't beat a great plate of spaghetti and garlic bread on

the side. Buy a jar of good quality sauce, and doctor it up with

garlic and onion powder, and a splash or two of red wine if

you have it. Add a smidgeon of garlic salt and add this to the

pot after adding about a half pound of seasoned and cooked

hamburger that's been diced up fine. You don't want lumpy

burger meat in your sauce. This takes about a half hour to

thicken into a sauce. Serve over spaghetti noodles and

top with Parmesan cheese and serve.

You can take a block of butter and let set til soft. Add

three cloves or four of diced fine garlic toes and add this to

the butter in a small bowl. Whip til soft to spread. And smoothe this over one side and then the other of bread. You

may need a bit more butter and garlic, if you have a big

loaf of Italian bread.Place under the oven broiler and heat

til golden brown. Then slice. You can't get by any cheaper I don't think. Unless you'd make Shepards Pie. And that is a layer of cooked hamburger placed in a baking dish. Top with two different canned vegitables or freshly cooked ones. Top

with a layer of mashed potatoes, and sprinkle with a layer

of cheddar or another preferred cheese. And bake til all is

heated through in a moderate oven of 350f. Using fresh

mashed potates rather than instant, will give the dish a more

robust taste and will add more flavor. Make sure that you

use butter or margarine when whipping them, as well as a

splash or two of milk, to get the right consistancy. Make

sure you add a bit of salt to season, before adding that

layer. It is a good comfort meal, that you also can add garlic

bread and a small salad with. It just doesn't look pretty on

a plate tho, all jumbled up as it tends to do when serving.

The spaghetti, will probably look neater on a dinner plate.

Chiles Rellenos with Picadillo

1/2 onion, chopped

2 garlic cloves, minced

2 bay leaves

2 tablespoons canola oil

1 pound ground beef

Salt and freshly ground black pepper

1 tablespoon fresh Mexican oregano leaves

1/4 teaspoon ground cloves

1/2 teaspoon ground cinnamon

1/2 to 1 cup tomato paste

2 chipotles in adobo sauce

3 to 6 tablespoons golden raisins

3 tablespoons slivered almonds, toasted

1/2 cup pimento stuffed green olives, sliced

1/2 to 1 cup crumbled queso blanco

8 large poblanos

Vegetable oil, for frying

Flour, for dredging

Salt and freshly ground black pepper

4 eggs, separated

Tomato Ranchero Sauce, recipe follows

To prepare Picadillo: In a large skillet, saute the onion, garlic and bay leaves in oil over moderate heat, stirring, until the onion is softened. Add the beef, and continue to cook until the beef is no longer pink; breaking up any lumps with a wooden spoon. Season with salt and pepper. Stir in oregano, cloves, and cinnamon. Pour out any excess fat and stir in the tomato paste until thoroughly incorporated. Add chipotles, raisins, almonds, and olives; salt to taste. Remove from heat. When mixture is cool, add cheese and mix well.

Char the flesh of the peppers over a gas flame, under a broiler or on a grill. Alternatively, set a rack over an electric burner or use a very hot heavy frying pan. Cook, turning frequently, until the skins are blistered all over. Take care not to overcook and burn right through the pepper. Put peppers in a bowl, cover with plastic wrap and let sweat for about 10 minutes to loosen the skins. Rub off as much skin as possible and cut a slit along the side of each pepper, keeping the stems and tip intact. Carefully remove the seeds and inner membranes, but do not rinse with water.

Heat 1-inch of oil in a heavy skillet over medium heat until very hot. Place flour in a shallow platter and season with salt and pepper. Beat egg whites until foamy, add a pinch of salt, and whip to stiff peaks. Lightly beat the egg yolks and fold into the whites. Stuff the chiles with picadillo, leaving enough room to close the opening. Overlap the seam slightly and gently squeeze closed. Secure with wooden toothpicks if desired. Pat the peppers dry and lightly coat in the seasoned flour. Pick the chile up by its stem and dip into the egg batter, making sure they are well covered, tap off excess. Fry until evenly browned, about 3 minutes each side. The egg burns easily so take care not to cook too long. Drain on paper towels. To serve, ladle a pool of Tomato Ranchero sauce on plates and set chiles rellenos on top, serve immediately.

Tomato Ranchero Sauce:

28-ounce can diced tomatoes

1/2 onion, roughly chopped

1/2 cup cilantro, roughly chopped

Pinch cumin seeds, toasted

1 garlic clove

2 tablespoons canola oil

1/2 cup chicken broth

Salt

Sugar

Dash hot red pepper sauce

Combine and puree the tomatoes, onion, cilantro, cumin, and garlic in a food processor.

Heat the oil in a saucepan or skillet and fry the tomato puree over high flame. Add broth, and salt. Simmer for 10 minutes until the sauce thickens slightly and is heated through. If sauce tastes somewhat bitter, add a pinch of sugar. Sprinkle with a dash of hot red pepper sauce. Sauce may be served hot or cold.

Jim's Famous Hamburger Recipe

Ingredients

1 lb hamburger meat

2 heaping tablespoons of chopped fresh rosemary leaves (not the stem)

2 Tbsp A1 sauce

Salt and pepper to taste (perhaps half a teaspoon of each).

Buns

Lettuce

Tomatoes, sliced

Onions, sliced

Avocado, peeled, pitted and sliced

Mayonaise, ketchup, mustard

Method

Mix the rosemary and A1 sauce into the hamburger meat, distributing evenly. Add salt and fresh ground pepper. Form out the hamburger patties. If the meat is low-fat, you may want to add some grapeseed oil or olive oil to the mixture, or after the patties are made (but before cooked), rub some oil over them. Place on a hot grill or grill pan. If you are indoors with a grill pan, be sure to use your stove fan. If on grill pan, lower the heat to medium high. Grill on one side until you can see the juice begin to run at the surface. Flip over and grill on the other side, again until you can see some juice coming through. If you wish, grill the buns on remaining grill surface. Onions can be either served fresh with the hamburger or sautéed a little in olive oil.

Serve burgers with lettuce, tomatoes, onions, avocado, mayo, ketchup, and or mustard. (For the low-carb version skip the bun.)

Serves 3 to 4.
