These are both good recipes.

Blue Cheese Burgers

Here's a tip, although you might be tempted to go with extra lean hamburger meat for this burger, given all the cheese, I don't recommend it, unless you want blue cheese flavored dry burgers.

Ingredients

* 1 pound ground beef (16-20%)

* 1 Tbsp Dijon mustard

* 2 cloves minced garlic

* 2 green onions, chopped

* 1/2 cup (about 2 ounces) crumbled blue cheese (get Pt. Reyes blue cheese if you can find it)

* 1 egg

* Salt and freshly ground black pepper

Method

1 Put ground beef, mustard, garlic, onions, blue cheese, and egg into a large bowl. Use your hands to gently mix the ingredients together until just incorporated. Do not over-mix. Shape into patties, about 1/2 inch thick and larger than your bun. Chill until you are ready to cook.

2 Prepare charcoal or gas grill for cooking over high direct heat. Using tongs and a folded up paper towel dipped in vegetable oil, oil the grill grates. Make sure grill is hot and well oiled before laying down the patties. Season patties with salt and pepper. Place the patties on the clean, well-oiled grill grate. Grill the burgers for about 5 minutes per side. Do not press down on the burgers while cooking.

If you don't have a grill, you can use a grill pan or a cast iron frying pan for the burgers.

Serve on hamburger buns with lettuce and mayonnaise.

Makes 4 burgers.

Marinated Greek Burgers

Makes 4 servings

Burger:

1 1/2 pounds ground chuck

1 tablespoon olive oil

1 1/2 tablespoons red wine

1 1/2 teaspoons red wine vinegar

12 juniper berries, crushed then finely chopped*

1/2 teaspoon ground pepper

1 teaspoon salt

1 tablespoon finely minced fresh rosemary

1 tablespoon finely minced fresh oregano

1 large clove garlic, crushed

Tzatziki Sauce:

1 cup Greek-style yogurt**

1 large clove garlic, crushed

1 tablespoon lemon juice

Thoroughly mix together all the burger ingredients, form into patties, wrap separately in plastic, and refrigerate for at least four hours and as long as 24 hours to allow flavors to meld.

Mix all tzatziki ingredients together and chill.

Put burgers on grill over medium heat for about 5 minutes per side. Serve on a bun with tzatziki sauce, thinly sliced cucumbers, and red onion.

*Juniper Berries are the berries from a relative of the juniper shrubs used in landscaping. They have a delicious resinous flavor and can be found at upscale markets. If you can't find them, increase the minced rosemary by 50 percent.

**Greek yogurt is thicker than most commercial yogurt. If you can鈥檛 find it, drain regular plain yogurt in a couple of folds of cheesecloth in a sieve over a bowl for 6 hours.
Great burgers are archived by getting the best meat combination possible. Ground chuck for moisture and ground sirloin for flavor and texture are great. Also the only seasoning you need is salt. With that and a hot pan you will have the best burger ever. Remember burger is all about the meat not the condiments.
I always add Worcestershire, A1, season salt, and pepper to taste. I also add a little bar-b-q sauce and a bit of flour to make them stick together. Mix it all in and let it set in the fridge for about an hour and go grill.
I always add an egg so the meat sticks together better... some bread cumbs so it absorbs the excess liquid.. some worchester sauce for flavor and sometimes a bit of steak spice, onions or pepper. be creative!! I always finish with smokey BBQ sauce!
I like to cook and make mine out of ground round ground meat a little paprika and sage and dice up some onions. and grille them kevin
Mix steak seasoning and some worchestershire sauce into the ground beef.
