Why do most hamburger recipes call for eggs?

Just wondering what the eggs add to the recipe?


Do they add flavour or are they there to hold the meat together?





And the same goes for bread crumbs in a burger...


Are they mainly used for flavour, texture or structure?

I have never seen a hamburger recipe......... that is how you make meatloaf or meatballs. hamburgers you just season and cook.
i think its supposed to keep the meat together,my mom never uses eggs when she makes burgers.i guess u could substitute with olive oil instead
