BACON AND DOUBLE CHEESEBURGER LOAF





INGREDIENTS:


4 slices bacon


1-1/2 pounds lean ground chuck or ground round


1 cup firm fresh white bread crumbs


1 cup coarsely shredded sharp Cheddar cheese (about 4 ounces)


1 large sweet onion, such as Vidalia, chopped


2 tablespoons regular or low-far mayonnaise


2 tablespoons India or other sweet pickle relish


2 teaspoons dry mustard


3/4 teaspoon salt


1/2 teaspoon freshly ground pepper


1 egg


1/4 cup ketchup


PREPARATION:


Preheat the oven to 350 degrees F. In a medium skillet, cook the bacon over medium heat until it is limp and some of the fat is rendered, 3 to 4 minutes.





In a large mixing bowl, use your hands to gently but thoroughly mix together the meat, bread crumbs, 1/2 cup of the cheese, onion, mayonnaise, relish, mustard, salt, pepper and egg. Pat the mixture into a shallow 2-quart baking pan. Spread the top of the loaf with the ketchup, then lay the bacon strips over the ketchup. Bake until the loaf is firm and the bacon is crisp, 45 to 50 minutes, sprinkling the top of the loaf with the remaining 1/2 cup cheese to melt during the last 5 to 10 minutes of baking. Internal temperature should be 155 degrees. Let the meatloaf stand in the baking dish for 10 minutes, then cut into squares to serve.








STUFFED GREEN PEPPERS





INGREDIENTS:


6 green bell peppers


salt to taste


1 pound ground beef


1/3 cup chopped onion


salt and pepper to taste


1 (14.5 ounce) can whole peeled tomatoes, chopped


1 teaspoon Worcestershire sauce


1/2 cup uncooked rice


1/2 cup water


1 cup shredded Cheddar cheese


2 (10.75 ounce) cans condensed tomato soup


water as needed

DIRECTIONS:


Bring a large pot of salted water to a boil. Cut the tops off the peppers, and remove the seeds. Cook peppers in boiling water for 5 minutes; drain. Sprinkle salt inside each pepper, and set aside.


In a large skillet, saute beef and onions for 5 minutes, or until beef is browned. Drain off excess fat, and season with salt and pepper. Stir in the tomatoes, rice, 1/2 cup water and Worcestershire sauce. Cover, and simmer for 15 minutes, or until rice is tender. Remove from heat, and stir in the cheese.


Preheat the oven to 350 degrees F. (175 degrees C). Stuff each pepper with the beef and rice mixture, and place peppers open side up in a baking dish. In a medium bowl, combine tomato soup with just enough water to make the soup a gravy consistency. Pour over the peppers.


Bake covered for 25 to 35 minutes, until heated through and cheese is melted and bubbly.








MEXICAN CASSEROLE





INGREDIENTS:


1 pound lean ground beef


1 (15 ounce) can ranch-style beans


1 (14.5 ounce) can peeled and diced tomatoes


1 (10.75 ounce) can condensed cream of mushroom soup


1 (12 ounce) package corn tortillas


4 cups shredded Cheddar cheese


2 tablespoons chili powder

DIRECTIONS:


Preheat oven to 350 degrees F (175 degrees C).


Brown the ground beef in a large skillet over medium high heat. Add chili powder, beans, tomatoes and soup; mix well and heat thoroughly.


Line a 13x9 inch dish with tortillas. Then make a layer with the meat mixture. Make another row of tortillas, then finish off with rest of meat mixture. Top with grated cheese.

It is simply named Hamburger Rice. All you do is cook the Hamburger and the rice in seperate dishes, then when the rice is finished you combine the two in a pan and mix thoroughly. The butter is to make sure the food doesn't stick to the pan and the salt and pepper are for seasoning purposes.
Stufed peppers , squash , MEAT LOAF!!!!
Fry the hamburger with a can of mushrooms. Stir in a can of mushroom soup (concentrated like campbells). Serve on any pasta (I prefer rotini). Cheap, fast, and tasty!
Hot Dogs, you just shape them like a frank and put em on hot dog buns, your kids will think you went crazy!
Casseroles are great. Here is how to make Shipwreck: Use about a three litre roaster for this. In the bottom, put in one sliced onion, salt and pepper; layer overtop thinly sliced potatoes - about 3 or 4 depending on their size, salt and pepper; overtop of the potatoes, put on about one pound raw ground beef, salt, pepper and garlic powder; then about one cup veggies - I usually use chopped celery, but also frozen mixed veggies. On top of the veggies, sprinkle one third cup raw white rice. In a separate bowl, mix one can condensed tomato soup with one can water, mix well. Pour overtop everything in the casserole - you can use a knife to separate portions to make sure everything is squooshed down - like separate part of the meat and pour some of the liquid down. Make sure the top with the rice is covered with the liquid. Cover the casserole, and bake at 350 degrees for at least one and a half hours. Let sit for 15 min. before digging in. This is so easy-peasy and delicious, we make it a lot. No fuss, no muss - and there are few recipes with raw ground beef you can chuck right in the oven. Enjoy!

Ground Beef Wellington:


Make your meatloaf and bake for approx. 45 minutes, covered @ 375


In the meantime, defrost according to directions on Pepperidge Farm Pastry Sheets. (40 min).


After the sheets are defrosted, flour your surface and place both sheets - side by side. Using rolling pin, roll thin. Place the two sheets together. Beat 1 egg and using a brush, meld the two pieces together.


By now, your meatloaf should be done - take out and allow to cool at least 30 min.


Place the meatloaf in the middle of the pastry sheet and roll together, pinching ends. Use the remaining egg and brush (egg wash) the entire loaf.


Bake according to directions on Pepperidge farm container, 400 degrees for 25 minutes or until golden brown.

MEATBALL SPECIAL:


1 lb. lean ground beef


1/2 cup bread crumbs


1 egg


1 cup tomato sauce- divided (1/4 %26amp; 3/4)


1 teaspoon salt


1/8 teaspoon pepper


1/8 teaspoon ground allspice


1 onion, chopped


2 Tablespoon oil


3 cups water


1 package Onion Soup Mix


1 1/2 cups carrots, sliced


10 oz. package frozen peas


1/2 cup green pepper, chopped


3 potatoes, cubed


Combine in a bowl; ground beef, bread crumbs, egg, 1/4 cup tomato sauce, salt, pepper, allspice and onion. Mix well and form into 12 meatballs. In a skillet, heat oil and add meatballs. Brown meatballs on all sides and drain grease. In a large pot, add meatballs, water, 3/4 cup tomato sauce, onion soup mix, carrots, peas, green pepper and potatoes. Bring to a boil and cook over low heat for 30 minutes or until vegetables are tender.





BAKED STUFFED EGGPLANT:


2 large eggplants


16 oz. mushrooms, sliced


1 Tablespoon oil


1 1/2 lbs. lean ground beef


1 large onion, chopped


2 (8 oz.) cans tomato sauce


1/2 teaspoon garlic powder


1/4 teaspoon pepper


1/4 teaspoon oregano


12 oz. mozzarella cheese, shredded


Wash and cut off stem of eggplants; cut in half lengthwise. Scoop out leaving 1/2-inch shells; cube centers. Arrange eggplant shells in baking dish. In large skillet, saute eggplant cubes and mushrooms in oil for 6-8 minutes or until tender; and set aside. In same skillet, brown ground beef and onion; drain off excess fat. Add eggplant mixture, tomato sauce, garlic powder, salt, pepper and oregano. Simmer for 5 minutes, stirring occasionally. Spread eggplant-meat mixture into the eggplant shells and top with mozzarella cheese. Bake at 350 degrees for 30 minutes, or until heated thoroughly. Let stand 5 minutes before serving.





SPANISH RICE CASSEROLE:


6 slices bacon; cooked, chopped


1 1/2 lb. ground beef


1 medium onion, chopped


1 small green pepper, chopped (optional)


1/8 teaspoon garlic powder or 1 clove garlic, minced


4 cups tomato juice


1 cup uncooked regular white rice


1 teaspoon paprika


In skillet over medium-high heat, cook bacon, drain off grease and set aside on paper towels, cool and chop into pieces. In same skillet brown beef with onion, pepper and garlic until thoroughly cooked; drain grease. Return bacon pieces and set aside. Wash rice, drain and add with tomato juice and paprika to the meat mixture. Heat to a boil. Pour into greased casserole dish. Bake at 350 degrees until rice is tender, about 30 minutes, adding more tomato juice as it is absorbed.





30 MINUTE CHILI CON CARNE:


1 cup onion, chopped


1 Tablespoon oil


1 lb. ground chuck


1 large can whole tomatoes with juice


1 (8 oz.) can tomato sauce


2 cups (16 oz.) kidney beans, drained


1 teaspoon salt


1/4 teaspoon pepper


2 1/2 teaspoons chili powder


2 1/2 teaspoons sugar


Saute onion in oil in large skillet. Remove onion and set aside. Brown ground chuck in the same pan and drain. Return meat and onion to skillet and add remaining ingredients. Simmer for 10 minutes and serve.





STUFFED CABBAGE LEAVES: Balandeliai


12 large cabbage leaves - cooked


1 1/2 pounds ground beef


1 cup cooked white rice


1 small onion - chopped


1 egg, beaten


1/2 teaspoon poultry seasoning OR thyme


2 teaspoon salt


1/2 teaspoon ground black pepper


2 Tablespoons oil


2 (8 ounce) cans Hunt's Tomato Sauce


1 Tablespoon brown sugar


1 cup water


1 Tablespoon lemon juice


Wash and place the head of cabbage in a large pot with water to cover. Cook over high heat. Boil cabbage over for 10 minutes, or until it is pliable and soft. Drain and allow to cool completely. Seperate leaves and remove the hard outer vein from the leaves. In a separate large bowl, combine the beef, rice, onion, poultry seasoning, garlic powder and the egg, mixing well. Place a small amount, about 1/2 cup, into the center of a cabbage leaf and fold leaf over, tucking in the sides of the leaf to keep meat mixture inside. (Some people use toothpicks to fasten them) Heat the stuffed cabbages in oil of large pot or skillet, putting any extra leaves on the bottom. (I use an electric frying pan but you can also bake them at 350 degrees for about 40-45 minutes- covered) Pour in the tomato sauce. Combine lemon juice, brown sugar and water. Stir into tomato sauce. Simmer covered, over medium-low heat for about 60 minutes. Baste occasionally. (Keep an eye on them, making sure the bottom of leaves do not burn.)
Hamburgers - the best!
If you put ground hamburger in mac and cheese it's really good and simple.
Southern Meat Loaf. (1) lb Hamburger, (1/2) onion chopped. (1) bell pepper chopped. (1) lb. Seasioned cracker crumbs, or pack. (1) can Tomato sauce. In large bowl combine all ingrendents. Mix well. Place in non-stick loaf pan, cover with tomato sauce, cook for 35min. at 350. or untill done.
