What are some good chicken recipes? or even Hamburger?

I am trying to make pasta salad but need a main dish!


My little girls are 1 and almost 3 so can pretty much eat almost anything but love chicken and hamburger! Also steak.. So any recipes or meals?What are some good chicken recipes? or even Hamburger?

I spray chicken breast with Pam on both sides sprinkle with italian salad dressing mix and bake. Fast, easy and yummy. Great as a sandwich or on its own.


For burgers I make a garlic herb butter and chill it. Then I put a little in the center of each patty and cook it
Since they're little you dont want anything too complicated for their developing pallets so why not make chicken casadeas. All you have to do is get some tortilla wraps, shredded cheese and chicken.





Cook the chicken





Put it in the wrap with some cheese and put it in a pan untill melted. Its short and simple not to mention kids love them. You can also hide bits of veggies in them and they wont notice.

Try putting cheese, bacon and bbq sauce on your chicken brest if you bbq them.

Spicy Garlic Lime Chicken - this is my fave chicken recipe - you could leave out the cayenne with your little ones : )








INGREDIENTS:





* 3/4 teaspoon salt


* 1/4 teaspoon black pepper


* 1/4 teaspoon cayenne pepper


* 1/8 teaspoon paprika


* 1/4 teaspoon garlic powder


* 1/8 teaspoon onion powder


* 1/4 teaspoon dried thyme


* 1/4 teaspoon dried parsley


* 4 boneless, skinless chicken breast halves


*


* 2 tablespoons butter


* 1 tablespoon olive oil


* 2 teaspoons garlic powder


* 3 tablespoons lime juice





DIRECTIONS





1. In a small bowl, mix together salt, black pepper, cayenne, paprika, 1/4 teaspoon garlic powder, onion powder, thyme and parsley. Sprinkle spice mixture generously on both sides of chicken breasts.


2. Heat butter and olive oil in a large heavy skillet over medium heat. Saute chicken until golden brown, about 6 minutes on each side. Sprinkle with 2 teaspoons garlic powder and lime juice. Cook 5 minutes, stirring frequently to coat evenly with sauce.
CHICKEN NUGGETS WITH HONEY MUSTARD


SAUCE





8 oz. chicken breast halves, skinned, boned and cut into bite sized pieces


1 tbsp. olive oil


1 clove garlic, minced


3/4 c. bread crumbs, finely ground


1/4 tsp. each garlic and onion powder


1/8 tsp. ground pepper


1/8 tsp. cayenne pepper


1 egg mixed with 1/2 tsp chicken bouillon





SAUCE:





1 tbsp. Dijon mustard


1 1/2 tsp. honey





Preheat oven to 475 degrees.


Beat egg and mix with chicken bouillon.





Combine chicken, olive oil, garlic and ground pepper. Marinate 30 minutes.





Combine bread crumbs and seasonings in shallow dish. Dip chicken in egg and rol in breadcrumb mixture; place on large cookie sheet. Spray with olive oil.





Bake 15 minutes.





Meanwhile, combine honey with mustard.





To serve, dip nuggets into sauce.

MEXICAN HAMBURGERS (CHULETAS)





Salsa Fria:





1 10 oz can diced tomatoes with green chiles


1 tablespoon olive oil


1 tablespoon wine vinegar








Chuletas:





2 cups Saltines, finely crushed


3 tablespoons fresh parsley, chopped


1 cup Vidalia onions, chopped


1/2 tsp garlic powder (not salt)


1 lb ground chuck (beef)


1 egg


1 tsp salt


1 tsp chili powder


1 cup oil (for frying)





Garnish:





Rings of red onion, slices of avocado, sour cream and sprigs of cilantro








Combine all Salsa Fria ingredients. Refrigerate for at least one hour.


On a sheet of wax paper, evenly spread cracker crumbs. Combine parsley, onions, ground meat, garlic powder, egg, chili powder and salt in a small bowl. Form 4 patties and coat each pattie with the cracker crumbs evenly. Cover and refrigerate for at least 1 hour (but no more than 3 hours) to thoroughly chill.





Heat oil until it is hot enough to brown a 1 inch cube of bread in a little over 1 minute. (Don't get oil too hot or center of patties won't cook through). Fry patties in oil well browned on outside and cooked through. Drain on paper towels.





Serve on a bed of iceberg lettuce with a few rings of red onion, topped with Salsa Fria and with a dollop of sour cream with a sprig of cilantro to the side and a slice of avocado.
