Where can I find recipes that are quick and easy like hamburger helper?

I don't have much time at night to cook a full meal, so I like to have a light super. Plus, it is only my husband and I eating, and we could care less for leftovers.Where can I find recipes that are quick and easy like hamburger helper?
That's will be easy. There is a book called The Four Ingredient Cookbook by Linda Coffee and Emily Cale. I use their recipes a lot. Besides, only my mom and I eat at home. Here are a few recipes from the book and other different book.








The following recipe the authors call for PORK TENDERLOIN and bake for 5 hours. I use 3 to 6 pieces pork chop and bake for 30 minutes at 350 degrees. You can substitute this with steak, cubed meats (beef), or fish (fillet). I tried this recipe using pork chops over the weekend and taste very good.





You can either marinade the night before or mix the sauce together, then coat the pork chops or meat and put on the casserole.





If you use fish fillet, be sure to put a thin coat of the sauce on the casserole first, then add the fish fillet on top and mix the rest of the sauce on the fish and bake for 15 minutes.





* You can also mix frozen vegetables (corn, beans or peas, and carrots) to the sauce before you pour over the meat.





PORK TENDERLOIN

Serves 6 to 8


Bake 325 Degrees


5 Hours





Ingredients:


3 pounds pork tenderloin


1 can (15 ounces) Tomato Sauce


1 package dry onion soup mix


2 tablespoons Worcestershire sauce





Methods:


Place tenderloin strips on aluminum foil. Mix remaining ingredients; spread over meat. Seal foil and place in shallow pan. Bake for 5 hours. Cut meat into 1-inch slices. Pour gravy in pan over slices of meat.








SWEET SOUR PORK CHOPS

Serves 6 to 8


Bake 350 degrees


Bake time: 1 Hour





Ingredients:


6 to 8 thick pork chops


1/4-cup soy sauce


1/4-cup chili sauce


1/4-cup Honey





Methods:


Mix honey, soy sauce, and chili sauces. Place pork chops in greased 3-quart casserole. Pour mixture over chops. Bake for 1 hour











SHERRY CHICKEN

Serves 4 to 6


Bake 350 degrees


Bake time 1 hour.





Ingredients:


6 medium chicken breasts (skinned and boned)


1 can cream of mushroom soup


1 1/3 cup sour cream


1/2-cup cooking sherry





Methods:


Place chicken in greased baking dish. Combine remaining ingredients and pour over chicken. Bake for 1 hour.











TANGY ITALIAN MUSHROOMS

Ingredients:


2 cups fresh mushrooms (sliced)


陆-cup Fat Free Italian Dressing


1 large onion (chopped)


Butter spray





Methods:


Marinate mushrooms in dressing for at least 1 hour or overnight, stirring occasionally. In non-stick skillet, saut茅 onion in butter spray. Drain mushrooms and add to onions. Continue to cook over medium heat until mushrooms are tender, but not limp.











PARSLEY NEW POTATOES

Ingredients:


2 cans (16 ounces each) sliced new potatoes (drained)


录 cup margarine (melted)


6 tablespoons fresh parsley (chopped)





Methods:


Place new potatoes in buttered casserole. Mix margarine and parsley and pour over potatoes. Bake 20 minutes at 350 degrees. Season to taste.














MAYONNAISE SHRIMP

Ingredients:


10 ounces (300 grams) shrimp


1 tablespoon soy sauce


5 tablespoons mayonnaise





Method:





Mix soy sauce in mayonnaise in a large bowl.


Rinse shrimp.


Peel and devein, leaving tails on.


Chill in mayonnaise mixture 1 to 2 hours

Some ideas that are just as easy, but healthier and more enjoyable than hamburger helper:





Buy chicken pieces (breasts, legs, whatever you like) that are individually quick frozen. This makes it very easy to thaw and cook just enough for the two of you. Thaw, season or marinade (Lawry's and KC Masterpiece make some great bottled marinades) and cook in the oven or on the grill. Boneless, skinless chicken breasts only take 20-25 minutes. While they are cooking, fresh or frozen veggies only take a minute to steam or microwave and either provides a healthy cooking method requiring no added fat. Or grill fruits and veggies with the chicken. I love grilled pineapple with teriyaki chicken!





Pork loin chops can be treated the same way as the chicken. Buy them in 2-3 chop packages from the butcher block again so you only need to defrost what you'll eat.





Portion salmon filets in 1 1/2 in strips. Season with lemon pepper and saute over high heat. Salmon will cook in less than 10 minutes.





Something along the line of hamburger helper but ';dressed up.'; Brown a pound of ground beef. Add a package of taco seasoning mix and 1 cup water. Add 1 can of fat free refried beans or ranch style beans. Use to fill tortillas for burritos, put over Frito's or tortilla chips for nachos or serve over lettuce for taco salad. Garnish all with cheeses, sour cream, olives, tomatoes, etc.
