Hamburger and steak recipes????

This beautiful spring weather has enticed me into setting up the patio furniture %26amp; heating up the grill.





I want to make hamburgers and steaks this coming Sunday when my family comes down to visit. However, I've never made either. I'm more of a pasta and chicken person.





Any good recipes for burgers and steaks, send them my way!

There really is a secret to great burgers:





First, you have to start with meat that is NOT lean, like 85%. (I know, it goes against our instincts, but that's what makes a really juicy hamburger). Next, you need to get a hamburger spice (found in the spice isle). Mix the spice in with the hamburger before you make patties, for a well-distributed flavor. Make nice, round, thick patties. When you grill them, DON'T smash them down with your spatula. You want the juice to stay inside.





Next, you need to find the best condiments you can. Offer several kinds of mustard (I love the spicy german kind), SWEET sliced onions, pickles that fit the hamburger bun, the best tomatoes you can find, ketchup, of course.





As for the bun. DON'T buy the pre-packaged kind, unless you have to. Go to the deli and see if they offer home made buns. Those would be much better. Also...get several kinds of cheese, again from the deli, to offer guests.





I would also make a killer salad or two. This always helps make a meal. Here is one salad everyone raves about, and it's really easy:





Caesar Coleslaw





1 pkg pre-made coleslaw


1/4-1/2 cup shredded parmesean cheese


1/2 pkg caesar croutons


1 bottle creamy caesar dressing





Toss first three ingredients together. Add enough dressing to coat. It's even good the next day!





and another that's quite good:





Broccoli Cheese Salad





4 cups broccoli, cut into small pieces


1 red onion, chopped


1 cup cubed cheddar cheese


6 slices bacon, cooked, crumbled





Combine above ingredients. Combine 1 cup mayonnaise, 录 cup sugar, and 2 Tbsp vinegar, salt and pepper to taste. Pour over salad.





Potatoe salad is always a hit. I haven't been able to make one that is better than the deli makes. It's called Reeser's potatoe salad. BBQ beans are always wonderful as a side, too.





Steaks are much easier than burgers. It's always great to grill a ribeye or rib steak. Cook for 5 minutes at a time on each side and continue to check for the doneness you want (less time for rare, more time for well done). However, you can use a cheaper cut of meat as long as you cook it at lower heat and slower. We usually get a cheap sirloin and cook it very slow and it turns out tender and wonderful. It also helps to tenderize it first by beating it to death with a meat hammer. (Or ask your butcher to tenderize it first). We put a little steak seasoning (from the spice isle at the grocery store). But that's it. No sauces, etc.

Add 1 tbs Worcestershire to a lb of meat.
For the burgers, mix in a little butter, liquid smoke, and Worcester sauce with the meat. When you make the patties, push in the center a tad so that they don't end up like balloons. Cook them rare or medium rare; anything else is a hockey puck.





If you want a cheese burger, put the cheese on the inside of the meat and poke some holes in the top of the patty.





For steak, put a little salt, pepper, and paprika on a rib eye. Brown it in a cast iron skillet with olive oil for 2 mins then put the whole thing in the oven and broil for 3 to 5 more minutes for medium rare.

Personally i like steak burgers, get some good quality steak and chop it finely but dont mash it. Mix with a little salt and pepper (but no oil whatsoever) and form thick patties out of them. Then place it on the oiled grill. Plain is best- just use great quality meat. If you want, brush both sides with bbq sauce after both sides have been grilled.
