Crockpot Minestrone

1 lb ground beef

1 small onion, chopped

3 cans Campbell's Minnestrone

2 cans red beans

1 can tomato sauce

1 can Rotel Tomatoes

1 soup can water (or more)

Saute the ground beef and onion in skillet until brown, drain grease. Put all ingredients into crockpot and cook on low for 8 hours.

This will be spicy - tone it down using more vegetables or less Rotel. My husband and friends love this and it's sooo easy. I cook it when we are in Colorado for ski weekends. It really doesn't need all day to cook since everything is cooked through already. I usually brown the beef and the onion the night before and put that in the fridge, then dump everything in the crockpot first thing in the morning. Then, we ski all morning and come back to the condo for lunch at noon and it is ready.
